This beautiful tea is a very clean and refreshing tea made by 'Da Bai Hao' (Big White Tea) from Zhenghe, Fujian province. Eye of Phoenix is a spring-picked green tea with a fresh taste, soft texture and sweet jasmine aroma. Each of the pearl is laboriously rolled by hand into small balls in the shape of an eye and then reserved until the jasmine blossoms. The tea absorbs the fragrant essence of the fresh jasmine, making the pearls sweet and aromatic.

The phoenix bird symbolizes immortality, resurrection and life after death. This is one of the highest quality handmade tea from Fujian. No perfumes nor added flavors, it is also a great natural remedy for stress. When infused, jasmine pearl tea will slowly unfurl as if the flowers open up. Jasmine tea is like champagne. It goes with almost everything, stands alone, and makes both a perfect hostess gift and a fabulous iced tea drink. How best to brew this divine full-leaf tea:

Please use glass Gaiwan or glass pot to make this tea. 

1. Place enough pearls to cover the bottom of the cup with a single layer.

2. Start heating about 2 to 3 cups of cold, filtered water until you get Shrimp Eyes (140-160F). When these tiny bubbles cover the bottom of the pan, pour the water into the gaiwan.

3. Cover and wait about a minute until the pearls begin to open, then watch as they settle, stroking the liquid occasionally with the lid.

4. In 2 to 3 minutes your first sip is ready.
