Bai Mu Dan, sometimes called Pai Mu Tan or White Peony is the quintessential white tea. A fine pick—the top three leaves—of tea that is simply plucked, withered, then packaged. Essentially no processing goes into producing this type of tea, so it could be said it is one of the purest teas around. Like aged pu-erh, aged white tea cakes are an experience all their own. As these White Peony (Bai Mu Dan) cakes age more subtle and complex flavors appear. There is a saying in China: ‘one year - tea, three years - medicine, seven years – treasure’.

An early Spring picked 2010 tea coming from Fujian, Fuding, on the coasts of the East China Sea. Our aged Bai Mu Dan is a white tea consisting of both fresh, silver buds, and more mature, first and second small size dark leaves. Because the longer they are stored, the richer and mellower they become. Most aged white teas are 5-6 years old, so teas aged 10-20 years old are very rare. Rest assured, our Bai Mu Dan is aged and indeed a treasure among teas.

Savory, viscous, and highly muscatel, this full-bodied white tea is a perfect daily drinker and is every bit as healthful as your typical green tea. The flavor of these older leaves is much darker and richer than their younger white teas. Flavors of brown sugar and ripe fruit are dominant compared to the younger Bai Mu Dan's white sugar sweetness and florals. Expect pure, long-lasting energy, and a pleasant feeling of hydration after working through the multiple steepings this magically simple tea will offer.

Brewing Guide: Use 1 tablespoon per 6 oz cup. Heat water until steaming (170º F). Let steep 3-4 minutes. Good for multiple infusions.
